Apple-Pear Puff Pancake

Whenever I serve this fruity puff pancake to family and friends, they think I slaved for hours in the kitchen. They're surprised to learn that such an attractive, delicious dish could be so easy to prepare.

TIME: Prep/Total Time: 30 min.
Ingredients:
- 3 tablespoons butter or margarine
- 4 eggs
- 1 cup milk
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1/8 teaspoon ground nutmeg
- TOPPING:
- 3 tablespoons butter or margarine
- 3 apples, sliced
- 3 pears, sliced
- 3 tablespoons sugar
- Maple syrup, optional
Directions:
Place butter in a 10-in. ovenproof skillet; place in a 425° oven for 2-3 minutes or until melted. In a blender, process eggs, milk, flour, sugar and nutmeg until smooth. Pour into hot skillet. Bake for 20 minutes or until puffy. Meanwhile, for topping, melt butter in a large skillet. Cook apples, pears and sugar for 12-15 minutes or until fruit is tender, stirring occasionally. Pour over pancake and cut into wedges. Serve with syrup if desired. Yield: 4-6 servings.
