"Apples and oats make up one of my favorite flavor combinations—and they are delicious in this snack cake," notes Julie Dometrovich from Aliquippa, Pennsylvania.

TIME: Prep: 25 min. Bake: 40 min. + cooling

Ingredients:

  • 1 cup boiling water
  • 1/2 cup old-fashioned oats
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1/3 cup unsweetened applesauce
  • 1 egg
  • 1-1/2 teaspoons vanilla extract
  • 1 medium apple, peeled and chopped
  • TOPPING:
  • 1/2 cup old-fashioned oats
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons cold butter

Directions:

In a bowl, combine boiling water and oats; set aside. In a large bowl, combine the flour, baking soda, cinnamon and salt. In a mixing bowl, combine the sugars and applesauce; beat well. Add the egg, vanilla and oat mixture; mix well. Stir into dry ingredients just until combined. Fold in apple.
    Pour into an 8-in. square baking dish coated with cooking spray. For the topping, combine the oats, flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over batter. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Yield: 12 servings.
